Winter Special Saag and Makkae ki Roti
*Introduction*
Saag and Makkae ki Roti is a classic Punjabi dish that is both delicious and nutritious. Saag, a spicy mustard green curry, is paired with Makkae ki Roti, a corn bread that is crispy on the outside and soft on the inside. This comforting dish is a staple in many North Indian households, especially during the winter months.

Ingredients:
- 1 bunch of mustard greens (sarson ka saag)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 inch of ginger, grated
- 1 tablespoon of ghee or oil
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chili powder
- Salt, to taste
- 2 tablespoons of makki ka atta (corn flour)
- 1 cup of water
Instructions:
1. Blanch the mustard greens in boiling water for 5 minutes. Drain and chop.
2. Heat oil in a pan and fry onion, garlic, and ginger until the onion is translucent.
3. Add the cumin seeds, coriander powder, turmeric powder, and red chili powder. Cook for 1 minute.
4. Add the chopped mustard greens, salt, and corn flour. Cook for 5 minutes.
5. Gradually add the water and cook until the saag thickens.

Ingredients:
- 2 cups of makki ka atta (corn flour)
- 1/2 cup of warm water
- 1/4 teaspoon of salt
- 1 tablespoon of ghee or oil
Instructions:
1. Mix the corn flour and salt in a bowl.
2. Gradually add the warm water and knead the dough for 5 minutes.
3. Divide the dough into 6-8 equal portions.
4. Roll out each portion into a thin circle.
5. Heat a non-stick pan and cook the roti for 1-2 minutes on each side.
6. Brush with ghee or oil and serve hot.
