Handi Beef Rice
A classic Pakistani dish! Here's a simple recipe for Handi Beef Rice, a flavorful and aromatic meal:
Ingredients
- 1 cup basmati rice
- 1 pound beef, cut into small pieces
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons ghee or oil
- 2 cups beef broth
- 1 cup water
- Fresh cilantro, for garnish
Instructions
1. *Prepare the rice*: Rinse the rice and soak it in water for 30 minutes. Drain and set aside.
2. *Cook the beef*: Heat 1 tablespoon of ghee or oil in a pan over medium heat. Add the beef and cook until browned, about 5 minutes. Remove from heat and set aside.
3. *Sauté the onions*: In the same pan, add the remaining 1 tablespoon of ghee or oil. Add the chopped onions and cook until they're lightly browned, about 5 minutes.
4. *Add spices and aromatics*: Add the minced garlic, ginger paste, cumin seeds, coriander powder, garam masala powder, turmeric powder, and red chili powder. Cook for 1 minute, stirring constantly.
5. *Add the beef broth and water*: Add the beef broth and water to the pan, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
6. *Add the cooked beef and rice*: Add the cooked beef and soaked rice to the pan, stirring to combine.
7. *Cook the Handi*: Cover the pan with a tight-fitting lid and cook over low heat for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
8. *Serve*: Garnish with fresh cilantro and serve hot.
